Adapted from King Arthur Baking.
Ingredients
- 3 cups all-purpose flour
- 3 tablespoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne or chipotle pepper
- 1 cup grated or diced sharp cheddar
- 12 oz beer (I used Modelo Especial)
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire or soy sauce
- Dash Tabasco
- 1 tablespoon olive oil, plus sea salt, for the top near the end of baking
Steps
- Mix the flour, baking powder, salt, spice and cheese in a bowl.
- Add the beer, mustard, Worcestershire/soy sauce and a dash of Tabasco, and mix together only until you see the flour incorporated.
- Bake at 350°F for about 45 minutes in a loaf pan, then carefully spread olive oil across the top (a pastry brush is ideal but not necessary) and sprinkle with a little salt. Return to the oven for about 7 more minutes, until a knife or toothpick comes out clean.
